This is a crazy concoction that I threw together a few weeks ago that turned out to be the best thing ever!!!
It's easy and healthy and a great alternative if you don't have a huge bunch of basil to make traditional pesto.
The recipe can also be made vegan by omitting the parmesan cheese. Try it tossed into whole wheat spaghetti or as a spread on sandwiches! I am totally hungry now.
1 Head Broccoli cut in to small pieces
1/2 of a Yellow Onion Diced
1/2 Tablespoon Red Pepper flakes
1/3 cup Parmesan Cheese
Salt and Pepper
2-3 Garlic cloves roughly chopped
1 Tablespoon Dried Basil
In a large skillet at Olive Oil and turn to medium heat. At Red Pepper Flakes and cook for one minute. Then add Broccoli and Onion and saute for 4 mins. Once Broccoli is bright green add Garlic (as much or as little as you want!) and saute until Broccoli is soft a cooked through. Take off heat and let cool for a moment and sprinkle the Dried Basil over the top. In the mean time set up your blender. The mixture will be very hot so you want to add it to the blender in a few batches adding a little bit of Parmesan Cheese and Olive Oil to each batch blending each until they are fairly smooth. The liquid left over from cooking the Broccoli and Onions in the pan should help the mixture move better in the blender, if you need to add a little water to the blender to help the mixture blend better you can. Once everything is combined add Salt and Pepper to taste. Add Broccoli Pesto to pasta and toss or use as a spread. Enjoy <3 !
