Mom's Muffins and Geraniums
My Mom loves geraniums and eating healthy (or at least making her kids eat healthy). I bought a geranium because they are a great flowering plant to keep indoors and I am some one who wishes she had the money for fresh flowers every week but that's not really a reality. Mom always got a geranium to put on the front stoop at our house. There a great plant and they smell great too. Growing up my mom would make me and my brother these awesome whole wheat muffins that she adapted from a Betty Crocker recipe. When my mom would come to visit Jen and I freshman year of college she would bring these from home for us which we totally loved so much. So here's the recipe and btw they are the easiest things to make ever. (Jen the diary is cooked of so you can still enjoy them!!)
Whole Wheat Muffins by Mom and Betty Crocker (the fictitious home maker)
Yields 11 mini muffins or about 9 regular
3/4 cup milk
1/2 cup of salad oil
2 cups whole wheat flour
1/3 cup sugar
1 tsp baking powder
1 tsp salt
Heat oven to 400 degrees. Grease the bottoms of muffin cups.
1.In a large bowl beat egg. Stir in milk and oil.
2.In a small bowl combined flour, sugar, baking powder, and salt. ( you can add fruit to this step if you wish)
3. Add dry ingredients to the large bowl with the liquid. Stir with spoon until moist and lumpy.
4. Fill muffin cups 3/4 full and bake 20-25 mins till tops are golden.
*Tip if you have empty cups fill with a little water so they don't burn.
If you take a butter knife and loosen the muffins around the edge and then pop them on there side they will cool really nicely in the muffin tin.
