a test: Breakfest and Lunch

2009 means new beginnings for me and I have started by jumping back in to the kitchen with a vow to cook more meals from home. I poached eggs for the first time successfully today. They looked pretty and tasted great. I have tried different methods but the Franny Farmer's cook book made my dreams a reality. Ok enough gloating here's the way I did it.

Fill a skillet 2/3 full of water and add 2 tbsp of vinegar. Bring to a simmer. Add 1 tbsp. of salt.
Crack egg and slide it in to simmering water. Spoon simmering water over the egg for 3 min. or until the egg whites become opaque. Use slotted spoon to remove egg from water. Serve!

I also made chicken by myself today which was a big deal seeing how I eat meat again. Chicken in a white wine sauce with shallots and olives. I got the recipe from this months' Real Simple magazine article and Greg and I say it's delicious. Fancy food that isn't that hard to make. Kid tested mother approved.
